Surfin Pumpkin Bread


Pumpkin BreadIngredients:

  • 1/4 (1 Cup) Roasted pumpkin
  • 5 x Cups wholemeal SR flour
  • 2 TB Vanilla Sustagen or Protein Powder
  • 1 TSP Ginger
  • ½ TSP Cinnamon
  • ½ TSP Nutmeg
  • ¼ Cup olive oil or coconut oil
  • 2 x eggs, beaten
  • 1 TSP Orange zest (optional)
  • ¼ Cup orange juice mixed with 1 TSP Honey
  • ¼ Cup sultanas
  • 3 TSP Pumpkin seeds

Roast the pumpkin in the oven until soft. Mix all the ingredients together in a bowl. Pour mixed into a cake tray and sprinkle with the pumpkin seeds. Bake in the oven on 150°c for 30 minutes.
