- 1 x Onion chopped
- 1 x Clove garlic chopped
- 1 x Small carrot chopped (optional)
- 1 x Small stick celery chopped (optional)
- 1 x 420g Can crushed tomato or 2 x Tomatoes chopped
- 1 x 420g Can mixed or cannellini beans
- 1/2 Teaspoon paprika
- 1/2 Teaspoon pepper
- 1/2 Teaspoon parsley
- 1 Teaspoon vegetable oil
Fry garlic, onion, carrot and celery in a pan with vegetable oil until cooked. Add in beans, crushed tomato, paprika and parsley and cook until heated. Serve on a piece of wholemeal toast and sprinkle with parsley and pepper to serve.
For extra protein crack an egg in the middle and bake until egg is cooked or serve with some cooked spinach.
